So, not very knowledgeable on this, but what does one need in terms of NFTs to have a good go on TAG?

You need to Beta Pass at the moment to play. Then you should aim for either the training sword (Fighter profession) or the training staff (caster profession) that will set you up well. Both items required a basic workshop pass and three branches to make.
