Palm fruit pasta and steamed vegetables || vegan recipe ||
Holla friends, it's a beautiful day to start with healthy meals and I bring to you a special recipe that I enjoy so much.
Palm fruits is rich in vitamins and minerals, it contains vitamin E and it's a good source of fiber. I enjoy using it sometimes in my cooking instead of vegetable oil because of the distinct flavor it gives to my meal.
For this meal I will be using the following ingredients;
4 Medium tomatoes
3 Yellow peppers
1 Onions
2 cooking spoons oil
500g pasta
1 teaspoon curry masala
Rosemary
1 tablespoon soy sauce
1 tablespoon Salt
1/4 Cabbage
1/4 Cucumber
2 cups water
PREPARATION
Start by washing and grinding tomatoes, peppers and 1/2 onions. I used a hand grinder to make it rough, set aside after grinding. Slice the other half onion and keep aside.
Wash vegetables, remove the outer skin of the cabbage and slice with the cucumber. Set aside after slicing.
COOKING PROCEDURE
▪︎set a clean pot with water on fire and bring to a boil, add pasta and salt, and cook for 5 minutes
strain excess water and set aside.
▪︎add 2 cooking spoons of palm oil, add onions and fry for few minutes. Go in with grinded tomatoes mix and spices.
Add little water and incorporate pasta to the tomato sauce, stir well and cook for 5 minutes.
our pasta is ready.
▪︎ get a small pot and set on low heat, add cabbage and allow to steam for a minute, add cury mix and soy sauce .
▪︎Add a pinch of salt and cucumber, stir and cook for 30 seconds and it's ready.
Our delicious palm oil pasta is ready which is enjoyed with steamed vegetables.
