Pumpkin season!

It is pumpkin season! As Halloween gets closer pumpkins are appearing on front porches as a seasonal decoration. It's one of my favorite times of year!

marina di chioggia

Some pumpkins and squash, like
marina di chioggia are chosen for cooking and baking. This old heirloom variety of squash from Italy is great for cooking and the plan for this one is for it to be turned into pumpkin pie, probably for our Thanksgiving dinner.

Moranga squash

This beauty has already been roasted and turned into a delicious soup!

Slice and remove seeds.

Roast pumpkin and garlic in the oven.

The recipe is simple - Scoop pumpkin from shells, add sautee carrots and onions, chicken stock, turmeric, black pepper and salt.
Blend all the ingredients together.

Serve with toasted bread, toasted seeds and nuts and cream.
It's a perfect meal as the days begin to get cooler and fall is in the air!

You can add your favorite spices. Sometimes I add cinnamon and nutmeg, and other times make it spicy with some hot peppers.

Peppers can be added but more spice is more hard to eat for me

Yes, taste can be increased by adding garlic and onion if mix them well.

Something new I learnt. Usually here in South India we either make curry with lentil or sweet porridge with jaggery. A very interesting share.

I have made it sweet before with cinnamon, a pinch of nutmeg and cloves.

I would like to try it with lentils!

Oh really ! Great. Yes with lentil, but lentil should only be 10% of pumpkin. Add some coconut grinded with cumin. The taste is exceptional.

This time of year so many harvested vegetables available for consumption. All these pumpkins i see now I'm craving for some pumpkin bread 😋

I admit I have never had a pumpkin soup before. But I do like my whipped cream with a side of pumpkin pie. 😄

Not just for pie! My pumpkins are almost ready while they are more than enough for one pie, I was trying to think of making with the other half. Thanks for the suggestion @melinda010100 🎃

Pumpkin, 1 big Onion, 2 pieces of garlic, 1 pack of cream and some vegeta (vegetable broth = I don't know the translation in English)

and for the serving 1 soup spoon of pumpkin seed oil.

It's one of my favorite soups and you can switch it up to taste different by using your favorite spices.
