初嚐越式排骨飯 / First Taste of Vietnamese Pork Rib Rice






最近,便利商店推出八款全新越南美食,包括越式牛肉寬粉、越式酸辣雞絲飯、越式火腿麵包及越南咖啡拿鐵等,我猜可能是來自越南的新住民越來越多了,為了滿足他們的思鄉情懷,及人們對於東南亞風味的渴望,才有這一系列的商品,不過,依照我的經驗,便利商店中央廚房的商品口味,應該不會符合新住民的需求,一定是新住民使用來自家鄉的調味料,加上自己的料理手法,才有可能符合新住民的需求,不是簡簡單單掛上「越式」兩個字,新住民就會買單。
我對越南料理印象,就是它們不論甚麼料理都會加上魚露,魚露是越南料理的靈魂,用魚露調味後,酸、辣、鹹等味道巧妙的融合在各道料理中,這也是東南亞料理的特色,因為東南亞國家都較熱,料理不帶點辣,人們會較沒胃口用餐,也符合東南亞多元的文化色彩。
這款便當,我在便利商店看了很多次,基本上,沒有太多人購買,不過,抱著我不入地獄,誰入地獄的嘗試精神,就買了這款便當,試試看味道,除了主菜排骨外,便當內還有烘蛋及蘿蔔絲,醃蘿蔔絲的調味很清淡,有點酸酸甜甜的,烘蛋還蠻大塊的,味道就一般,排骨不知道用甚麼調味的,排骨很薄但夠大片,吃起來甜甜的,整款便當吃下來,沒有印象中越式料理的感覺,是一款偏甜的清爽便當。
聽說,越南咖啡也蠻有特色的,越南在1970年代晚期至1980年代曾為全球第2大咖啡產國,越南高地盛產的咖啡豆,用來沖泡出來的咖啡,味道濃烈、苦味重、咖啡因含量較高,加上越南氣候炎熱,所以用冰塊取代熱水,以冰塊溶化的冷水製作冰滴咖啡,再加上大量的煉乳,壓下咖啡的苦味,所以,越南咖啡超甜的,可能是因為這樣,所以,這款越式排骨飯也偏甜。
Recently, a convenience store launched eight new Vietnamese dishes, including Vietnamese beef noodles, spicy and sour chicken rice, Vietnamese ham sandwiches, and Vietnamese coffee lattes. I’m guessing this is because there are more and more new immigrants from Vietnam, and these items are meant to satisfy their homesickness, as well as the growing demand for Southeast Asian flavors. However, based on my experience, the flavors from convenience store central kitchens probably won’t meet the expectations of the new immigrants. It’s only when they use ingredients and cooking methods from their homeland that it might actually satisfy their cravings. Just slapping the label "Vietnamese" on it isn’t going to make new immigrants buy it.
My impression of Vietnamese food is that no matter what dish it is, they always add fish sauce. Fish sauce is the soul of Vietnamese cuisine. After seasoning with it, the sour, spicy, and salty flavors blend together in a way that’s distinct to Southeast Asian dishes. Since Southeast Asian countries are generally hot, if the food isn’t spicy, people might not feel like eating much. It also reflects the vibrant cultural diversity of Southeast Asia.
As for the bento, I’ve seen it in the convenience store many times, and honestly, not many people are buying it. But with a “no one else will, so I might as well” kind of attitude, I bought it to give it a try. Besides the main dish of pork ribs, there was also a baked egg and pickled radish. The radish was lightly seasoned, with a bit of a sweet and sour flavor. The egg was pretty big, but the taste was just average. I’m not sure what seasoning they used on the pork ribs, but they were thin, though the portion was big. The taste was sweet. Overall, after eating the whole bento, it didn’t feel like Vietnamese food to me. It was more like a light, slightly sweet meal.
I’ve also heard that Vietnamese coffee is pretty special. In the late 1970s to the 1980s, Vietnam was the second-largest coffee producer in the world. The coffee beans grown in the Vietnamese highlands are brewed into strong, bitter coffee with a high caffeine content. Since Vietnam has a hot climate, they use ice instead of hot water, brewing iced drip coffee with melted ice water. They also add a lot of condensed milk to balance out the bitterness, which is why Vietnamese coffee is super sweet. Maybe that’s why this Vietnamese pork rib meal was on the sweeter side too.

上次吃了越式的手捲,感覺不太優😂,可能我沒有很適應越式口味。
